I have known chef Miguel Cobo for years and have had the pleasure of sitting down to eat together and trying his exclusive Michelin Star tasting menu. It is in the heart of Burgos and the chef himself has told me all the secrets of his Menu; possibly the most enriching meal I have had in many years, listening to Miguel Cobo is music to the ears. Located in Plaza de la Libertad 9, Cobo Evolución is chef Miguel Cobo's flagship project.

This restaurant offers a unique dining experience that fuses scientific research and culinary avant-garde. The tasting menu, called "Humanity", guides diners through six key stages of human evolution: Africa, Atapuerca, Altamira, Neolithic, Rome and Mestizaje. Cobo Evolución is part of the Cobo Estratos gastronomic space, which also houses Cobo Tradición, dedicated to traditional dishes with a contemporary approach.
