Bierstube

Bierstube, located at 50 Licenciado Poza Street in Bilbao, is the Thate brothers’ latest venture in the beer scene. The brothers are well-known in the city for their experience in the German hospitality industry, with establishments such as Ein Prosit and the deli La Moderna. Opened in February 2025, this venue has quickly established itself as a go-to spot for lovers of Central European cuisine and good beer in a lively atmosphere.

Bierstube’s menu focuses on German specialties, notably its artisanal sausages—made by the Thate family—roasted pork knuckle (Schweinehaxe), and Kartoffen 3 Salsas (homemade potatoes). In addition, the menu includes hamburgers, sirloin with foie gras, an assortment of croquettes, and a variety of salads. To accompany your meal, Bierstube offers a carefully curated selection of beers, including five German and one Belgian draft beer, as well as eight bottled options, all served in their proper glasses.

The restaurant has a Bavarian atmosphere, ideal for getting together with friends and watching soccer games—especially those featuring Athletic Bilbao, Bayern Munich, and other European leagues—thanks to its big screens. The establishment features a terrace and décor that includes a humorous “beer prayer” and a photo mural with mementos from the Thate family, lending authenticity and warmth to the space.
