Nostre Cocina

The restaurant I'm visiting today is located next to Valencia's Central Market, called Nostre Cocina and specialises in signature cuisine in a more avant-garde style. They have three tasting menus for €45, €60 and €70. I came hungry so I ordered the longer tasting menu and hope to come out full and not have to look for a kebab.

The menu starts with snacks. Skewers from your garden (very well pickled vegetables).Follow with a slush of fermented white asparagus on which they pour a pollen emulsion. The seaweed tartlet with trout from the Pyrenees has a leek cream that makes a fantastic harmony. The latest starters are pâté in French croûte and ultra-creamy Iberian ham croquettes.

Let's start with the main courses. They bring me a dish that has fuss and grilled figs on top of which they throw a green garlic.Plato espectacular, la quisquilla junto a la hoja de higuera queda de muerte. El moje manchego es una ensalada de origen manchego, compuesta de tomate y rellena de atún.

También probé las cocochas de merluza junto a un espárrago blanco de Navarra, perfecto para comer con cuchara y coger el pil pil. Algunos platos más que me sirvieron fueron la gamba de bleda (muy recomendado), arroz de hierbas con cordero del Pirineo aragonés (cordero súper meloso) o el salmonete a la brasa.
